  • 6 boneless chicken thighs
  • 2 tablespoons sunflower oil
  • 1 tablespoon ground turmeric
  • 2 teaspoons salt
  • 2 tablespoons potato or cornflour

Sambal Jam  (Alternative 150g of Ping’s ready homemade sambal jam)

  • 8 cloves garlic 
  • 1 tablespoon turmeric
  • 2 stalks lemongrass 
  • 15 fresh & dried chiles
  • 1 large onion
  • 5 tablespoons vegetable or sunflower oil
  • 3 tablespoons coconut sugar
  • 2 tablespoons tamarind juice
  • 5 x lime kaffir leaves
  • 1 x lime juice
