INGREDIENTS

This recipe uses beef ribs to create a rich, flavourful broth, enhanced with ginger, garlic, and finished with white miso for a comforting bowl of ramen.

Yields: Approx. 4 servings Prep time: 20 minutes Cook time: 2.5 – 3.5 hours (stovetop) or ~1 hour (pressure cooker)

  • 1 kg Beef Ribs (bone-in preferred for more flavour)
  • 2 Tablespoons Olive Oil
  • 50 grams Ginger, smashed (roughly slice and hit with the side of a knife or a mallet)
  • 5 cloves Garlic, smashed
  • 1 bunch Spring Onions
  • 2 Tablespoons White Miso Paste
  • 2-2.5 Litres Water 
  • Salt and Black Pepper to taste
  • 2 sheets roasted seaweed 
  • 10 grams Kombu – Algae
  • 4 servings Ramen Noodles (fresh or dried)

Equipment:

  • Large heavy-bottomed pot or Dutch oven (or Pressure Cooker/Instant Pot)
  • Fine-mesh sieve
  • Separate pot for cooking noodles
  • Serving bowls
